It all started when I wanted to help my husband, Greg, improve his diet. I was already an admitted "health nut" and had been eating a plant-based organic diet for the past 10 years. Thankfully, my husband saw this as a good thing and started asking me to help him eat better. His father had suffered a heart-attack in 2005 and had to have quadruple bipass surgery. He knew he needed to make a change now. On top of that, he works in a high-stress job and got in the common rut of skipping breakfast, shoving food down at his desk and calling it "lunch", and then drinking and eating too much at night when he was out at restaurants with clients.
We all get so caught up in the daily stress of life and forget that every time we eat we have a choice. Choose to do something good for yourself and eat less animal protein and more fruits and vegetables. Choose whole grains over breads, pastas and other processed flour products. Choose to eat local, seasonal and organic foods. I promise you it will make you look and feel your best.
Since I've started cooking for two, I've found creative ways to prove to my husband that healthy food CAN taste great! As a couple we've been able to eat food we love, share more time together and do something good for the planet. We also want to share a long healthy life together...the better our health, the better our odds of having more time with each other on Earth! Choosing to eat right on a daily basis, exercising and sharing quality time with our loved ones will lead us to a better future...as individuals, as a nation and as a civilization. It all starts at home. So get cookin'!

Tempeh is a cake made of fermented soy beans (and sometimes rice or other grains too). It has a dense and nutty texture and will take on whatever flavors you add to it. Along with miso, it's the healthiest form of soy out there because it aids in the good bacteria in your body. This improves digestion and immune function. It's also very high in protein, iron and calcium making it especially good for women to eat. Stay tuned for lots of tempeh recipes!

I LOVE quinoa. There are so many ways to enjoy it and with so much protein in each serving and hardly any time to cook it, I find myself eating a lot of it these days.
ReplyDeletelove the site. thanks for the discussion. i'm making your chili now. i wanted to gain your thoughts on "fresh direct" or other online food ordering sites. i know ideally we would all shop at our local coop or farmer's market, but that isn't an option for me and making it to the store is hard too with my hours at work. fresh direct does carry organic.i was able to find everything for my chili there. thoughts?
ReplyDeleteTrue, Les. In an ideal world we would all shop at our local green market all the time and support the farmers in our area. However, I think online food delivery services are really a plus because the time they save you shopping is more time for you to spend in the kitchen making your own food. That's the healthiest way to eat afterall! Just be sure whatever service you're using does offer organics and/or local produce. You can also search the web for delivery services from some of your local farmers. With all food services, freshness is key...I think "Fresh Direct" has that down:) Keep ordering from them but try and make a trip to the farmers market on a Saturday when you have more time. Even going once a month makes a difference!
